Six Dollar London Broil

While I was checking out the meat isle at our local market, and suffering from sticker shock everywhere I looked, I ran across some two-pound London broils marked down to six bucks! Since our food philosophy is heavily based on “opportunism” I grabbed one and headed home to figure out how this would fit into our meal planning.

The first thing I did was to split it up into three pretty equal pieces, two for now and one went into the freezer for later. Then looked around the kitchen for what we had around- red peppers, onions, broccolini, jalapenos, Yukon gold potatoes, provolone cheese, and some Italian rolls. It was obvious we’d have cheese steaks for dinner!

The following morning, I peeled and chopped two large Yukon gold potatoes, immersed them in salted water for about 15 minutes, then drained and dried them in a towel, chopped up about ½ small yellow onion, 1 large jalapeno, and pulled out 2 eggs, 1 tsp. “Old Bay” seasoning, and 1 tbsp of our homemade chipotle Russian dressing. The meat was seasoned with salt and pepper and allowed to warm up some.

I filled a deep pot with water and added 3 tbsp. of apple cider vinegar, some salt and brought it to a low boil (covered). Next, heat up two cast iron pans- in the first 2 tbsp. of duck fat went in along with the potatoes on a medium high heat- moving the potatoes around until they started to brown all over, then added the onions and jalapenos, cooked another few minutes and mixed in a large sprinkle of Old Bay then plate. I drop the eggs into the water/vinegar solution about the same time the onions and jalapenos get added- three minutes works for both.

Next drop the meet into the very hot cast iron pan and sear about one minute on all sides, for a total of about 6-8 minutes, pull off the heat and allow to rest. Pull the eggs with a slotted spoon and carefully lay on top of the potatoes.

After about 8 minutes, slice the meat against the grain is thin slices, plate, then garnish with chipotle Russian dressing. Finally add a toasted piece of “Dave’s Killer Bread” to each plate. Done!
