One of our standard playbook Italian roll meals is the Roast Beef and Horseradish hoagie. Its loosely based on a sandwich I used to get at Wawa back in the East Coast days.  It’s a really quick and tasty meal that includes horseradish cheddar cheese, fresh horseradish, and our homemade Russian dressing.

Ingredients: 2 Italian Rolls (like Amoroso); ½ lb. London Broil roast beef (like Boarshead); 6-8 slices horseradish cheddar cheese; 1/3-1/2 red onion sliced thin and coarsely chopped; 1/3 cup apple cider vinegar; 1/4 cup raw cane sugar; 1/3 cup water; 2-3 large romaine leaves cored and chopped; ¼ cup “Revamped Russian” dressing (in “Condiment” section); fresh horseradish root; 1-2 tbsp. olive oil.

Steps:

  1. In a medium size bowl combine the vinegar, sugar, and water together and mix very well until the sugar has dissolved, then add the onions and stir. Set aside for about 30 minutes while making the sandwiches.
  2. Split the two rolls longways being sure not to break the “hinge”. Heat up a large pan or griddle, add the olive oil and lay in the rolls rotating a couple times (its good to use some weight for consistent browning). Once browned remove and lay on plates.
  3. Next add the horseradish cheddar cheese onto each roll (more or less based on personal taste), then add the onions after draining. I place the onions here, so they don’t fall out all over the place while being eaten. Then place the roast beef onto each sandwich, followed by the Russian Dressing, and finally the lettuce.
  4. Finish the hoagie off by grating some fresh horseradish on top of each sandwich, salt, and pepper to taste if preferred, then slice in half and serve.

  6. Left over roast beef sliced thin could be used for this recipe as long as it’s not overcooked.
