These quick pickled vegetables are a great replacement for store bought condiments. They add a nice flavor and crunch to lots for dishes from chorizo burgers to our E&A sandwich, and are inspired by Swedish chef Tareq Taylor.

Ingredients
½ large red onion sliced thin and halved
1 large jalapeno cored and sliced
⅓ cup apple cider vinegar
¼ cup organic raw cane sugar
½ cup water
½ apple cored, peeled, and sliced (Optional)

  1. Whisk the apple cider vinegar, sugar, and water together until the sugar dissolves, then add the sliced red onions and sliced jalapenos. Let stand for 30-60 minutes stirring several times before serving.
  2. Apples can be added to this mixture for use with barbequed pork sandwiches, with ham or on pizza.
