The smoky flavor of grilled fresh fruit like peaches, plums, pears, and pineapple adds variety to any meal. For peaches from our trees, we’ve developed a marinate that supports their natural taste and adds some depth, making it perfect on top of French toast, or our favorite with grilled jalapeno biscuits topped with homemade whipped cream!
Ingredients
4 peaches seed removed, halved, and sliced (plums or pears too)
1 tbsp good quality bourbon
2 tsp fermented pepper hot sauce (not vinegar based- optional)
1 tbsp dark brown sugar
½ tsp cayenne pepper
2 tbsp avocado oil
1 tbsp butter
¼ tsp salt
¼ tsp pepper
- Combine all the ingredients except the peaches into a large zip lock bag and mix very well.
- Add the peaches to the marinate and mix together by kneading and turning over several times. Allow to rest 30-60 minutes turning a couple more times.
- Place the peach slices in a cast iron pan with melted butter on the grill’s grate at about 400 °F for 3 or 4 minutes, then turn over and cook for another 3-4 minutes or until softened some. Pull from the grill, remove to a dish, salt and pepper to taste then serve.
- These can be reheated from the refrigerator on the griddle with a tablespoon of butter.
- We combine these with homemade jalapeno biscuits, halved and grilled, and top with homemade whipped cream for a fantastic dessert.
