Background: We wanted a cucumber salad at home similar to one we get in Sushi restaurants. Wet tried to replicate the flavors made by our sushi master in Bel Air, MD (pronounced Blair). It goes well with supermarket sushi and our homemade pickled ginger and magic sauce.

Ingredients:
1 cucumber
3 tbsp Rice Vinegar
1 tbsp granulated sugar
¼ tsp salt
1 tsp soy sauce (we use Tamari)
½ tsp homemade hot sauce (optional)
1 tbsp of light oil (we use Avocado oil)
1 tsp Sake
1 tsp Mirin
3-4 drops of sesame oil
¼ jalapeno, finely chopped
¼ tsp sesame seeds
⅛ tsp white pepper

Steps:
1. Peel the cucumber, cut it in half longways and remove the seeds, then thinly slice, or cut into matchsticks.
2. Put the Rice Vinegar, sugar, salt, soy sauce, homemade hot sauce, oil, sesame oil, Sake and Mirin into a small bowl and mix well until the sugar and salt are dissolved.
3. Add the cucumber and jalapeno to the bowl and mix well.
4. Sprinkle sesame seeds on top when serving.
