When I was a kid, my grandmother would make grilled cheese for lunch a lot, with giant chunks of butter on the outside of the bread, browned in a pan, and they were great. Over the years I’ve experimented with many ingredients like sliced ham, or tomato, and finally landed on Famous Dave’s spicy pickle chips, which give the sandwich a nice “pop”. I always use both cheddar and pepper jack cheese, and cover the pan to keep the heat in to melt the cheese.

Ingredients
4 slices 21 grain bread or similar
2 oz medium cheddar cheese sliced off the block
2 oz pepperjack cheese sliced off the block
2 tbsp Dijon mustard
4-5 spicy pickle chips or 2 spicy spears chopped
1-2 tbsp butter

  1. Lay out the first two pieces of bread, and spread on half the mustard, next sprinkle on the chopped pickles, then lay the slices of cheese alternately across the bread (should take 6-8 slices to cover the whole piece) and press them down to “anchor” the pickles. Spread mustard on the other slices of bread and place them on top.
  2. In a large wide pan or griddle, melt the butter and spread around the pan, then place the sandwiches in and cover. Keep the heat around medium low and cook the first side for 3-4 minutes, press them down with a spatula, then carefully, flip over supporting the top, cover and cook another 5-6 minutes- checking the bottom a couple times- until nicely browned and the cheese looks melted. I normally try and flip onto an area that still has butter on it to minimize adding any more butter. Sometimes I’ll flip twice depending on how the heat was working.
  3. Remove from the pan, plate, salt, and pepper to taste, then cut in half and serve!
