Background: One of our favorite ways to enjoy fresh fruit like peaches, plums, pears, and pineapple is to grill it. There’s nothing like adding that smokey char and taste to really enhance the taste. For peaches from our trees, we’ve developed a marinate that supports their natural taste and adds some depth, making it perfect on top of French toast, or our favorite with grilled jalapeno biscuits and topped with homemade whipped cream!

Ingredients: 

4 peaches seed removed, halved, and sliced
1 tbsp good quality bourbon
2 tsp fermented pepper hot sauce (not vinegar based)
1 tbsp dark brown sugar
½ tsp cayenne pepper
2 tbsp grapeseed oil
1 tbsp butter
¼ tsp salt;
¼ tsp pepper.

Steps:

  1. Using a large Ziplock bag, add all the ingredients except the peaches and mix very well. 
  2. Add the peaches to the marinate and mix together by kneading and turning over several times. Allow to rest 30-60 minutes turning a couple more times. 
  3. Place the peach slices in a cast iron pan with melted butter on the grate of the grill at about 400F for 3 or 4 minutes, then turn over and cook for another 3-4 minutes or until it softens some. Pull from the grill, remove to a dish, salt and pepper to taste then serve.
  4. These can be reheated from the refrigerator on the griddle with a tablespoon of butter.
  5. We combine these with homemade jalapeno biscuits, halved and grilled, and top with homemade whipped cream for a fantastic dessert.
