One of our favorite ways to enjoy fresh fruit like peaches, plums, pears, and pineapple is to grill them. There’s nothing like adding that smoky char and flavor to really enhance the taste of many dishes. For pineapple, we’ve developed a marinate that supports its natural taste and adds some sweetness and depth, making it perfect with ribs and in rice.
Ingredients
1 pineapple remove top, bottom, skin, cored and sliced into rings
1 tbsp good quality brandy
2 tsp fermented pepper hot sauce (not vinegar based) or similar
1 tbsp dark brown sugar
2 tbsp peanut or avocado oil
¼ tsp salt
¼ tsp pepper
- Using a large Ziplock bag, add all the ingredients except the pineapple and mix very well.
- Add the pineapple to the marinate and mix well by kneading and turning over several times. Allow to rest 30-60 minutes turning a couple times.
- Place the pineapple slices on the grate of a grill at around 400 °F for about 3 or 4 minutes, then turn over and cook for another 3-4 minutes or until it softens some. Pull from the grill and remove to a dish to serve.
- These are great as leftovers, with rice dishes, and ribs, pork chops, or ham.
