We’ve been trying new recipes for what I would call “take out”, particularly Asian style dishes, since there aren’t many around here. One we tried was a classic “Beef and Broccoli” which gave the inspiration for this dish, which allows us to use all the partial vegetables in the refrigerator, and just about any fresh or leftover protein. Break out the chopsticks!
Ingredients
Sauce
2 tbsp brown sugar
2 tbsp minced garlic
1 tbsp minced ginger
1 tsp gochujang
1 tsp mirin
½ tsp sesame oil
1 tbsp cornstarch
2 tbsp soy sauce
2 tbsp oyster sauce
½ cup water
Stir Fry
8-12 oz petite sirloin or ribeye (London broil or pork is fine too)
2 cups cooked Jasmine rice
½ red pepper chopped
1 stalk celery split and chopped
1 large shallot sliced and chopped
½ medium onion sliced longways
4 oz mushrooms chopped (optional)
1 large carrot peeled and chopped
4 cups broccoli florets
¼-1/2 cup vegetable stock
1-2 tbsp chopped roasted peanuts
1 jalapeno cored and chopped
4 tbsp peanut oil for cooking
- Thinly slice the meat then cut into 1-inch pieces, salt and pepper to taste. Mix the soy sauce, brown sugar, cornstarch, mirin, oyster sauce, sesame oil, water, garlic, gochujang, and ginger together in a bowl.
- Heat 2 tbsp peanut oil to 350 °F in a large cast iron pan, drop in the meat and cook the first side for about 2 minutes, then flip them over for another couple minutes, until all the exterior red is gone, remove from the pan.
- Drop two more tablespoons of peanut oil in and add the celery, carrot, onion, red pepper, mushrooms, shallots, and jalapeno to the pan, cook for about 3 minutes, then add the broccoli florets and stock. Cover the pan and cook for another 5-6 minutes, mixing and turning everything a couple times.
- Remove the lid, the broccoli should have lightened in color, then pour in the sauce and mix well– cook for only a couple minutes, then drop the meat back in ,mix to coat everything, turn off the heat.
- Lay the rice out on the plates then spoon the pan mixture over the top. Garnish with the chopped peanuts.
