Background: Over the years we’ve tried lots of different techniques for saucing or glazing a baked ham, and finally developed a sauce with nice depth of flavor and consistency. We don’t use it on the exterior of the ham, but as a sauce when it’s been plated or on sandwiches.
Ingredients:
1 tbsp grapeseed oil
1 shallot chopped
2 tbsp white wine
½ cup homemade vegetable stock
2 tsp homemade mustard
1 tbsp chipotle peppers in adobo sauce
2 tsp brown sugar
1 tbsp honey
2 tbsp apple juice
2 tbsp butter
salt and pepper to taste
Steps:
- Heat grapeseed oil in a saucepan over medium heat.
- Add shallots and cook until softened, 1-2 min.
- Pour in wine and cook off alcohol for 2 min.
- Add stock, mustard, chipotle peppers, brown sugar, honey, and apple juice. Bring to a boil then lower heat to medium low and simmer uncovered for 20 minutes to thicken.
- Add butter and cook for 4 – 5 more minutes.
- Add salt and pepper to taste.
