We wanted a cucumber salad at home similar to the ones we get in sushi restaurants, but with our taste profiles.  We tried to replicate the flavors made by our sushi Master from Bel Air, MD (pronounced Blair) that adds a nice touch with homemade or supermarket sushi.

Ingredients
1 cucumber
3 tbsp Rice Vinegar
1 tbsp granulated sugar
1 tsp soy sauce (Tamari)
½ tsp gochujang
1 tbsp of light oil (peanut or avocado)
1 tsp Sake
1 tsp Mirin
3-4 drops of sesame oil
¼ jalapeno, finely chopped
¼ tsp sesame seeds
⅛ tsp white pepper

  1. Combine the rice vinegar, sugar, soy sauce, gochujang, oil, sesame oil, Sake, mirin, and white pepper into a small bowl and mix well until the sugar is dissolved.
  2. Peel the cucumber, cut it in half longways and remove the seeds, then thinly slice, or cut into matchsticks.
  3. Add the cucumber and jalapeno to the bowl and mix well.
  4. Sprinkle sesame seeds on top when serving.
