Background: When I would visit with my Grandma Johnson (Kathryn) in Louisiana she would spend a lot of time cooking and making really awesome dishes. One thing she taught me was to not spend a lot of time on ingredients that were already cooked- like baked beans- but to elevate them to fit our taste. Every time I make these beans, I see us working in her New Iberia kitchen and it feels nice!
Ingredients:
16 oz baked beans
4 tbsp finely chopped onion
2 tbsp finely chopped jalapeno or similar chili
1 tsp dark brown sugar
1 tsp molasses
1.5 tbsp apple cider vinegar
Steps:
In a medium saucepan combine all the ingredients and mix well. Bring to a slow boil, stirring often, then simmer for about 6 minutes uncovered, until reduced. The vegetables should still be crisp only a slight change in color.
