We had lot of leftovers so we combined the rice and chicken leftovers with fajita vegetables, added some homemade chicken stock and sour cream to make the filling and put it in home made pastry and formed a hand pie, then baked the pies at 425F until browned.   We used up an avocado, tomatoes, and grilled corn that was hanging around too. Our mission is always ” to not let anything go bad”. Worked out pretty well now I have to write down the specific recipe for what we did!
