Okra is a vegetable that people either love or hate. After trying it many ways over the years, we found that simple roasting works well for our cooking playbook-it’s perfect in vegetable corn rice, which we eat a lot of, tastes like candy to me, and is super easy to make.

Ingredients
2 cups fresh okra
2 tbsp peanut oil
½ tsp salt
½ tsp pepper

  1. Rinse the okra, pat dry then remove the tops and bottoms. Cut each piece into 3/8”-1/2” sections. Set the oven to 400 °F.
  2. Place the okra in a plastic bag or bowl, pour in the peanut oil, and add the salt and pepper. Mix around till all the pieces are well covered.
  3. Place the okra pieces on a sheet pan (lined with a silicone baking mat) and spread around so they are not touching.
  4. Place the pan in the middle of the oven and roast for about 25 minutes, turning once midway through. The ends should show some color when they are done, then remove and allow to cool down, ready for use.
